At Boston festival, kimchi recipes and kimchi making all the craze

Have you ever tried kimchi? It’s a cabbage-based, fermented condiment, often spicy, that’s a staple of Korean cooking. I think my first taste came last year, when it topped brown rice as part of a homemade meal of soy-grilled salmon and honey-glazed seaweed salad. Yum.

Thus, it was with great excitement that I reported on this past weekend’s First Annual Greater Boston Kimchi Festival in West Roxbury for the West Roxbury Transcript. More than 20 entrants prepared their own kimchis that were available for sampling. There were also kimchi-prep experts sharing kimchi recipes and the craft of kimchi making. I found that I preferred spicier kimchi to sweet, but it was fun to try a range. And it goes to show that the Parkway area (of which I’m a resident) can throw down with the best ethnic food festivals!
